- Back up your Apple Watch
Your Apple Watch automatically backs up to the paired iPhone. Ensure your iPhone has the latest data from your Apple Watch before unpairing it. - Unpair Apple Watch from iPhone and Apple ID
Keep your Apple Watch and iPhone close together. Open the Watch app on your iPhone and tap on the "My Watch" tab. Tap on "All Apple Watches" and tap the info button next to your Watch’s name. Tap "Unpair Apple Watch" and confirm by tapping "Unpair" again. For GPS + Cellular models, choose whether to keep or remove your cellular plan. Then, enter your Apple ID password to disable the activation lock. - Erase Apple Watch
Navigate to General > Reset > tap "Erase All Content and Settings". Follow the steps to erase everything. After this, the Watch will be completely reset and ready for use without any personal data.

You may need to enter your passcode.
